Couple of my hives are producing(?) the bee with the white hairs on the thorax (it looks like pollen but it is not). Is it a breed that has these or something else?

10yrs ago or so I was actually catching them to see what gawd awful funguses my hives had lol.
It’s pollen that the bee can’t clean off themselves and has to cleaned off by their hive mates.

Wait till you see the bees coming in with a white or red stripe down the center of the thorax. It is almost always pollen that colors the bees.
