Nope, but it sounds like an interesting option. Epoxy is a cure all for many things, once it hardens there is no breaking it loose most times. Slick glass like surface is better than plastic since there is no variation in the surface like plastic. I don't personally use plastic frames, i like my wooden ones, but i use RiteCell foundation for now. The bees glue down everything with a crack on my frames so i don't really worry too much with SHB having places to lay in them. If you decide to epoxy the bars up, let us know how it works out for you.
