I am thinking of taking off a few supers off at my next inspection, but don't have time right now to do the extracting, question is I have access to a walk in cooler that is 38-40 deg. could I keep fully capped supers in there, if so how long or would the honey crystalize and not uncap and spin out. Was just thinking a cooler rather than in an air tight bag, so would not have to worry about moths or mice getting into them.

If it was me I would wait until your extractor is ready. Pull them and extract, the honey is already warm.
