I filter my honey through two mesh screens, the second being almost cloth-like in its tight weave. There aren't any particles large enough to skim, but there does appear to be a lot of small particles--wax and pollen I guess. What I do is first bottle the honey I want to sell or give away. The last bit from the top, as it approaches the honey gate at the bottom of the tank, I save for myself. I like it just fine.

a skimmer for ice fishing works well. rugged and cheap.
Yes, sink it into the floating wax with rim level and let the wax run in evenly or help it in with a spoon. Rinse and repeat. I tried skimming with a large spoon but that seems to cause more mixing in at the surface. It sure helps to float up the wax and easier to filter if you have a way to keep the honey very warm. My clarifier is a bunch of 5 US gallon pails with honey gates on.
