Burning the fields to get rid of the saw-like leaves, hand cutting, etc. Huge piles of rotting cane that one could smell for miles. Ah, the Florida cane fields, home of Domino brand sugar. Back in the mid 80's I used to prepare tanker loads of inhibited muriatic acid for the mills for use in cleaning. Apparently HCl eats through burned sugar, the inhibitor kept it from eating the steel. I have eaten raw sugar cane, surprisingly it is not all that sweet tasting.
