I have some honey from scraps of comb that I may have heated too much. It tastes different to any honey I've tried with a very pleasant toffee after-taste. I'm thinking it was starting to turn into toffee, but it's still liquid and has remained so while other batches have crystallized.

I've made taffee from honey. It was wonderful. After draining cappings I usually melt them gently and after removing the wax from the top (after it cools) then I use it for baking or candy as it's already dark and not as "fresh" tasting. It makes great candy.
