I'm new beekeeper and have had 2 nucs for 3 weeks. I have been checking hive once a week. is that ok or do I need wait longer.

Once a week is about right for inspection intervals. How they doing? Probably about time to move them to full size equipment.

I put them in 8 frame deeps 3 days after I got them and they are doing good. I had to add second box to one of them

Welcome to beekeeping and the forum Jimmy. I am just going into my fourth season and one of the best things you can do as a newbie is to learn, and learning involves doing regular inspections. Once a week is good, but no more unless you are dealing or monitoring an issue. It is disruptive to the hive, but the benefits to you far outweigh the downside to them. How are you going to deal with mites? J
