HELP! Green Tint To Our Fall Honey. Why?

This is our first harvest ever and was so glad to get any at all. We put supers on late in the year (around July) and was only planning on giving the bees space to grow. Anyhow some of the stronger hives filled the upper supers and in October I pulled them off so I could treat the hives with apigaurd.

The honey we got as best as I can figure is from star thistle that was blooming till they tilled the fields because of fire dangers. It's really dark and has a real yellow look to it in a white 5 gallon bucket. In the glass jar it has a green ting to it. Enough of one that my brother notice it and say wow it looks green. It tastes really strong also, almost like medicine. I didn't have a good watering source for them and they would end up getting stale water from the neighbors 55 gallon drums. Did this have anything to do with it? I don't want anyone to get sick from it. Is all fall honey normally dark?

Another possible answer. Look closely at your jar. Some, very popular glass honey jars, have a slight smoky gray tint, barely visible, but, when honey is added, slightly changes the color of the honey. Very yellow honey may look light green to light brown, light brown honey may take on a greenish tint, dark brown honey may even look black. Put a little in a different jar and look at it.

I also doubt that it is from the water.

Do you have a candy factory nearby? Mountain Dew bottling? A sno-cone stand. There was a story last year I think about a hive with honey that turned out to be cherry syrup.

Pure star thistle honey is a light yellow and has a definite greenish tint to it. If the bees worked other wildflowers at the same time it would give it a stronger flavor, but star thistle honey is top quality.

By the way ,our star thistle was mixed with a darker wildflower honey and came out so dark and strong we couldn't call it star thistle honey.


The water source has no influence on the honey.

In regards to Solomon's post I had a customer come in and wanted me to taste her honey. It had the distinct flavor of butterscotch. As I know of nothing in nature that as a forage base that would taste like that I quizzed her about her location. It turns out she is near a commercial cattle operation and a large horse farm. I am convinced the bees were foraging on feed supplements.

That is exactly what my bees did this year at one of my outyards.
Most of my fall honey was real dark, darker than normal but the one yard had what looked black and it tasted just like molasses syrup that they feed dairy cattle. Found out the neighbor across the road had recently purchased a few milk cows and my bees must have found and they even capped the syrup.
I was wondering if they would do it again next year?? This year was a very poor honey crop in my area and if we would get a normal season hopefully they would have enough forage to leave the cattle feed alone.
It is one of my better yards, but did not produce even enough for my bees to winter on.

I did a cutout in Sept. that was full of green or green/blue honey. I figured they got into some sort of blue soda. After inspecting hives at home I noticed that about 10 of them had small amounts of the green honey too. I'm about 15 miles south of Stockton.

My start thistle honey is pure yellow and very light colored and has a very light taste, not strong at all another thing I did notice is it doesnt have that "honey" smell to it, it is a very light fragrance.

I received a bottle of honey from a friend in town and it had the color of maple syrup, had a very distinct "honey" smell and tasted very good!! The cool thing is I get to put a hive or two on a property not to far from my friends house, I will have some "City Bees"!!! Only allowed two hives in town per house hold in Livermore..........although I know a few people who are running up to five!!LOL
