If my frames are capped everywhere but on 1 corner like 20 or so cells, do I need to wait for them to cap that or is it such a small amount that it will just mix in with the capped honey.

You need 80% or more capped but always bee careful of how much moisture the honey has, I have extracted frames with no capps and it was 15% moisture.

I would extract if it's that small an area. When I am unsure, I shake the frame once in a downward movement. If the nectar sprays out, then it was not ripe enough for me but it's gone. If it doesn't shake out, I don't worry about it and I extract.
