Last year our honey that we harvested in late June was amazing. In October we harvested two frames just to try that honey and it was good but not like our first harvest. We left full mediums for our hives to over winter and they still have most of it capped. If we want to try to replicate the taste from the late June harvest as much as possible is there any reason why I should not harvest the entire mediums that were over wintered to give the ladies more space and comb for a preferred honey flavor? Thanks in advance!
