Have you ever heard of honey refractometers, those gadgets used for reading moisture content of honey? Well, I´ve seen uncapped honey at 18% moisture.
Sometimes bees just don´t seem to finish the job of capping, but since we uncap anyway, why not check the uncapped honey to make sure?
It could be that bees have finally come to grips with a clever idea: why waste our comb building, precious wax with cappings if this guy removes it anyway?
I guess if i were a bee, I´d wonder.
