Just curious as to when most GA beekeepers harvest honey? Last year was the first time I harvested (3rd year beek here) and I only did it once in September.

No....they have produced about as much honey as they will this year. They are consumers for most of the summer. We get a very small fall flow....I am reluctant to even call it a flow. If you removed all of their honey today...they would surely starve before summer's end.
I harvest some in June (I'll be extracting for the next couple of weeks) but leave plenty to get through the summer. By early September I'll do a small harvest, taking anything else that I can at the same time leaving enough for them to overwinter.
