I have about 4 gallons of honey I got back in the spring from one of my hives sitting in my basement in a 5 gallon bucket, a man ordered a gallon so I went down they yesterday to get it and I discovered the lid wasnt snapped down tight on the bucket, when I opened it , it had a fermented smell, i tasted it and it kinds had a whang to it.. is it ruined? can it be saved? what has happened? thanks!

what I did was heat the fermented honey to evaporated the alcohol, and i added half good honey to lower the water content to below 20%, it seems to have worked, We ate it and cooked with it, it was ok, BUT DO NOT SELL THIS, as your reputation as a bee keeper is very important!

If you look at many tests in regards to cooking alcohol out of foods, it really doesn't work the way we liked to think it did. In fact very little alcohol is cooked off. I agree, it sounds like you have a large bucket to play with and cook with, but only for yourself
