Their primary source of water in the winter is their respiration. The bees give off more water than they need - hence the need to ventilate.

The bees' moisture needs are met by honey (in the winter.)

I think the trick is to find the balance, w/ my venting setup, I no longer have condensate gathering on the inner cover and I can see frost in the corners of the hive, so I'm content with that.
Yea they do need moisture for drink, I've watched them working the melting snow on days they can break cluster, they probably utilize the condensate on the inside as well.
