Hello - I have a very generous friend that is a master woodworker and he recently gave me a horizontal hive that uses langstroth deep frames. I would like to use mediums. I am planning on putting in a false bottom in it. What bee space should be below the frames? Today it has almost zero space between the bottom of the box and they frames. I am in Dallas TX area so I am hoping the bees will be okay in the winter>

In my opinion - not a good idea. I've been running horizontal framed hives for some years now and have found that increasing the frame depth from 8.5" to 12" has proved to be a wise move. Other people have found that even deeper frames are advantageous in locations more challenging than mine. Personally I would advise against reducing your frame depth - even in Texas.
