Just ate my first BLT of this year's tomato season. My three year old insists that he just wants to eat bacon for dinner.

7 to 10 lbs of pork belly, 1/2 cup kosher salt, 6 days, 9 hours of apple wood smoke makes breakfast heaven,,,
is it too late for breakfast ?

For some reason pork and kosher just doesn't sound right...

It stopped being kosher salt once it got into the kitchen with the pork.

I thought each had to be Kosher. If one is Kosher it doesn't make the other Kosher by default. I'm so confused. I know we have some Jewish members here. Maybe they will chime in. I am curious.


One a different note. Those bacon nachos look outstanding!! That is going into the recipe vault.
