Anyone ever put a vacuum gauge on a bee vac? I was thinking about how vacuum, would relate to bee suction velocity, and the number of bees killed.

If it were a REALLY SLOOOWWWWW day maybe . There are a lot of factors that velocity would interact with (tubing type, length of run, dimensions of the cage). After the first use you'll know by holding the intake against your hand how it's tuned.
