I have inspected my hives today and I have noticed that they still have a lot of honey and pollen stores present (like 6 deep frames or so).

I was wondering why they ate so little till now and if they will utilize these stores in the coming weeks for brood build up?

I just went through this. I have 8 frame boxes, deep and medium brooder and deep honey super. I fed about 50-60lbs of syrup and looked in a week ago to see lots of bees but also lots of capped syrup honey. 4-5 frames in the honey super and most of the medium brood box frames were also honey. Not much activity in the honey super either but lots of bees in the hive. Checked on and off (just peeking in) since and there's way more bees everyday in the top honey super. March-April is when they will really pound through the stores, especially once brooding kicks in again.
