From things that I have read I understand that the bees are flexable in the jobs that they do, basically fufilling the needs of the hive. The Bush Bees web site lists:

Nurse bee (1-10 days)
Honey production (11-18 days)
Ventalation/guard(19-21 days)
Field bee (22 - death)

Has abyone seen an estimate of the percentage of bees in each job in a hive? :s I would think that the above age classification works in general, but would be different for a new package, or a hive that has been queenless. Also different for Winter, or during Spring build up, etc.
