Hi guys,
I recently harvested my honey from the hives
Taste great at first but leaves a bad aftertaste
Does anyone know what this could be

Location,nectar sources,moisture content,aroma etc.

The hives are at Fairy Meadow NSW
Not sure of the nectar source, as we have a lot of natives and fruit trees around this area
Not sure of the moisture content
The aroma is great, when you first tasted it it’s great but then there’s an aftertaste after that
