Seems like melting sugar would bee so simple. I mixed 4 cups of sugar and about 1-1/2 cups of water and heated to 275 degrees it melted and bubbled just like it should. I mixed 1/4 tsp lemon grass oil and stirred. Poured it out onto some parchment paper and it started crystalizing from the inside out. I mean you could hear it crackling like rice crispies. So i dumped it back into the pot, added another cup of water to start the process all over again. This time I let it get to 300 degrees. The hotter it got the more crystalized it became. At this point I said forget it and dumped it out and patted it down into a 1/2" thick paste of wet sugar.
It has now cooled down and it is a mass of crystalized sugar with the consistency of soft peppermint candy. I will see what the girls think of it. Go figure!:s
