    Mead or cooking. Luckily I've never had honey ferment, outside of mead making. Natural yeast can produce off flavors but you could pasturize it then add water and known good yeast from lavlin and let it ferment fully.

    I am a homebrewer and a backyard beekeeper. I add this type of honey to beer. Usually 1lb per 5 gallon batch at the very end of boiling.
