In August I calibrated my new refractometer and then tested some other guy's honey at 18.1. The honey we extracted in August was 18.1 also. However, after storing it in a bucket with a lid, it now reads 16.5 so I will assume the lid was not air tight like we thought.
Is 16.5 going to be a problem? It seems to be as liquid as before. Retested that other honey and it is still 18.1.
Will this low moisture honey be ok to use to make creamed honey.
