    I am using a 5 gal carboy which has a capacity of 6 gal. So the level of the must is 7 or 8 inches below the neck. No need to remove any liquid but if I let the hydrometer go into the carboy I am afraid it will be a trick to fish it out. The top of the hydrometer will be well below the neck of the carboy.

    I'd suggest a wine thief from your local supplier, here's one on amazon for $6.

    I have a jar. I am stuck on the turkey baster to fill it. Just got to add an extension tube.
