just made a batch of candy that looks slightly caramelized. it taste like the crust on a crème brulee. randy oliver talks about HMF levels in caramelized syrup being safe to a certain percentage & that when it's too high the syrup taste bitter & it becomes toxic to bees. last part of his statement was do not feed the bees something you would not eat. i'm not going to chance killing bees overs $2.00 worth of sugar so i'm tossing it. but i'm wondering if I find this batch edible would it be safe for the bees?
