    Default Honey and Cheese

    I've been asked to write an article on honey and cheese. Those are two food items I have never considered pairing up together. Is this a thing? Any foodies out there enjoy honey and cheese together?

    Now that you've brought it up Cheryl, yes, one of my favorites is a piece of whole grain bread with a thin spread of honey butter topped with a slice of cheese. I mean real cheese not "American" or "processed" cheese. Fattening? Yes, but now that you've brought it up, I'm coming out of the closet. And as long as I'm comfessing, a slice of ham in there is pretty darned good too.

    Lol, the only way I've ever eaten honey with cheese has been an apple pie made with honey chased by a piece of cheddar

    Good job Savannah for some really creative marketing! I think we may be on to something here. My taste buds say a mild honey paired with a cheese with a little "bite" like a sharp cheddar is perfect. I have a real affinity for Swiss cheese as well, though again, not the white processed cheese that some refer to as Swiss. Yes, I know, I'm a cheese snob.

    Warm Brie with figs covered with honey is delicious. Real gourmet delight.

    Oh yeah. Comb honey, a slice of apple, and a bit of Vermont Cheddar. Yummm!

    When we have a pot luck at the beekeeper's meetings here in the state, that's what I take. Goes with everything.

    I've sold comb honey to chefs who place it in the center of a cheese platter.

    Nothing better than Brie with honey. Heat the brie in the oven first, then drizzle honey on top. YUM.
    On my 5th year with bees, 2 hives.

    We plate comb honey with Brie or Camembert and fresh raspberries (the raspberries add a little twang) - half a Ross Round and half a small wheel of cheese surrounded by berries present nicely.
    Alternatively we plate comb honey with Blue Cheese. It works nicely, off setting the intense flavor of the cheese.
    We've also served extracted honey with cheese and a small Muth bottle with a craft stick for a dipper (guests can drizzle on their own).
    We serve sliced baguettes off to the side and guests can make mini open face sandwiches.

    It's typically the hit of any party.

    A nice dry sheep cheese, perhaps a baguette, a square of honey comb, and a nice red wine/port/meade/scotch/PBR. Done.
    The key is to leverage the sweet/savoury taste buds for full effect. Go for the gusto!

    You'll notice I added PBR. I like the finer things (hence the scotch) and being in the NW its usually a finer micro-brew, but PBR is not beneath me.

    We eat honey and cheese for breakfast all of the time. Buckwheat and sharp cheddar pair well, as does a light wildflower and Jarlsberg or Bergeron.

    Cut comb or section comb is excellent on cheese platter. Try a scoop of cut comb on a cracker with cheese and a slice of pear or a raspberry. Honey spread on brie before baking is nice too

    I remember seeing a list years ago by Martha Stewart pairing different cheeses and with different types of honey.

    Sort of like cleansing the palate with the citric in the grape and then eating the cheese The point is to intensely taste the two extreme flavors.

    Brie with honey and nuts.
    Blue cheese with honey.
