30 oz. can pumpkin
1 can evaporated milk *
1/4 tsp. salt
1/2 tsp. ginger
1 tsp. nutmeg (or 1/2 tsp.)
1 tsp. cinnamon
1-1/4 cups sugar (or 1 to 1-1/4 cups of honey!) *
Place mixture in bottom of greased 9x13 pan. Sprinkle dry yellow cake mix on top of mixture. Sprinkle 1/2 cup chopped pecan pieces evenly over the dry cake layer.
Melt 1 cup butter and pour evenly over the pecans.
Bake at 350 for 1 hour.
* Notes: Honey was used in place of sugar so I reduced liquid in recipe by substituting (1/3 cup of dry powdered milk dissolved in about 1/3 cup water) for the evaporated milk. This recipe has turned out differently for me at times. Not sure why, but still good. Sometimes more like cake and sometimes more like pie. Maybe the first time I used sugar, IDK. I may even try mixing the dry cake mix in a little before adding pecans and butter on the top.
