Honey Peanut Brittle

Just made a batch and it turned out pretty darn good! It has a mild honey flavor. Merely replaced half the sugar with honey from a family favorite candy recipe.

1 cup sugar
1 cup white corn syrup
1 cup honey
4 Tbsp water
1 cup margarine
3 cups salted shelled peanuts
3/4 tsp vanilla
3/4 tsp baking soda

Mix sugar,corn syrup, water and honey in a heavy bottomed saucepan and bring to a boil. Use medium/low heat.

Add margarine and melt and stir thoroughly to blend.

Continue cooking with out stirring and take temperature to 270F.

Add peanuts and stir continually till temp is 294F.

Add vanilla and baking soda and stir vigorously.

Pour hot mixture onto two greased(margarine) cookie sheets and spread flat with the spoon.. Need to work quickly.

Let cool for an hour and then lift and break with a metal egg turner.

Candy thermomter is a must for us, however you can try a a cold water bath and judging a hard crack stage.

Likely a handy gadget, however I won't be buying one over the internet. Bought a refractometer for $67 this past fall from Blue Sky and then shipping was $30.
