I live in south Alabama where winters are usually very mild (in the 70s today) so the bees are still very active. I started my first hive in the spring and all seems to be going well. I allowed them to fill two deep supers then, using a queen excluder, I added a shallow super toward the end of summer. At this point each, all of the frames in the shallow super are combed and filled with uncapped honey. Probably about 10 to 20 percent of each frame is capped. The bees seem to still be busily working to fill and cap the combs so my question is: is there a point in the fall/winter after which I shouldn't collect the honey? Should I expect the bees to cap the combs at this point making the honey collectable or should I just wait until spring?
