I've always been told that our main flow is in the spring, and that you should take honey off in June. But leave them enough to get through the dearth in July, August and the first part of September. Then you're into the fall flow, in late September and October. But everything they make during the fall flow you should leave for the bees and let them use that to get through winter. Spring build up begins in mid to late February, and then we go round again.

Here's a link to the UF Beekeeping Calendar. You may find this helpful.

I start harvesting a little in late May and then take off what I need ,in small increments, until October. In other words,I seldom take more than one medium super, per hive, at one time.I expect to do that two to four times during a normal season.
edited to add...I use one deep and one medium for the bees and never take from those.

    Welcome.

I don't know about your flow up there but it's a lot easier to pull honey if there is still some flow left.
