We did the final racking on Friday and the mead looks and actually tastes great already! We will bottle it in a couple weeks and let it sit, including letting a couple bottles sit for a year or two to age. It ended up coming out to 15.1% ABV.

We are going to carbonate half the batch and just let the other half sit. In total it's 5 gallons worth of good stuff!
