I have 5 super loaded with honey but it is not capped yet, I don't want to leave it on to long as I want to make sure the girls build up their stores for the winter. Anyone have a good way of drying non-ripe honey?

I have built a platform out of empty deeps that allowed me to run a space heater underneath and let that warm air circulate up thru the stacks. Don't over heat it and melt the combs but a couple days and the honey will be nicely dry.
I hopeful don't mind me asking this but how do you tell when it is dry enough without a refractometer or some special tool. Thank you very much.
