Star thistle honey color

The honey is a light green color
Have been told star thistle looks like this but have also have been told safflower looks green. Thistle is the only thing within a mile but did see one field of safflower a couple miles away.

Purple lostrif honey has a greenish tint to it, I'm not sure if you guys have that plant in Cali but it's in bloom now in the northeast

The honey is yellow with a slight green tint. When you hold a bottle up to the light you can see it.
