    Default Vintage Honey

    Does anyone save a jar of honey from each year they harvest to see how it changes over the years like wine? WVMJ

    I normally save a jar from each batch more for quaility control. To see how long crystalization takes and what not.

    kept bees for five years then sold farm and moved to city lived in apts and condos for a while before settling and getting a house in country on just an acre. Got couple hives as soon as I could and enjoying it again... The last year I was on the farm I had four hives well established and knew I was moving so kept half the spring and half the fall harvests this was six years ago I still have couple quarts of honey left so looks like I will run out soon and will make due until spring. Guess I won't keep my honey much longer but did keep a few quarts from each harvest for many years different colors from year to year and flavors... had a really strong honey one fall blamed asters for it had to cook with it.

    We have a member of our local club that saves a 2 oz bottle of each time she extracts. Labels it with the date, and has them lined up on a shelf.
