If you have a dehydrator, that works well to recrystallize small amounts of honey. Just set the temp at 100 and let it go.

For the winter wedding, it seems like the light bulb-in-a-box idea would be the best. Have any boxes sitting around from shipped woodenware? Put a bunch of bears in the box with ample space for air along with a 60W (100W would be better) bulb and they will heat up really fast. You should only need to turn on the light a day before the event. Put the boxes together a month ahead though, That's most likely going to be a hectic week for everyone involved.
Just liquified some honey in the kitchen oven. Used a 100W bulb in a trouble lamp and temp went up to 120F.
Left it in for 1.5 hours. Works like a charm.
If you desire a lower temp use a 60W bulb.
We use our oven this way for raising home made bread in the bowl and in the bread pans
