Brix and Honey
Hi all;
If I get a brix reading of 83, I know that this means 83 grams of sugar in 100 grams of sugar and honey.
How do I tell the sucrose% from this number? Normally sucrose contents would be in the range 2-8%.
How do I know that this is a good honey or not?
Does the 83% mean all sugars (i.e. glocose, fructose, sucrose , and maltose)?
I appreciate ansewrs from the experts

Saeed, brix measures the % solids, so yes it is measuring the content of all sugars.
