Uncapped frames..what do I do?

So the weather was partly sunny and 78 degrees. I thought this was a good time to get into the hives one last time. I got to pull one full super and on another hive they had uncapped nectar. So my question is will they still cap it and if not do I just pull it and let them clean it up in the spring?

Leave it and let them do with it what they will, cap it, eat it for winter food or-------
