What do you commercial guys do about keeping your honey liquid if you store it rather than sell it when extracted. Do the buyers care if it is crystallized or not.
Bulk in the drum the buyers expect to be granulated, they are set up to liquify. We do have some smaller local sellers that make sure to buy while it is liquid.
Retail sellers normally process it to the point where it might take many months to granulate. If it is sold as raw, the educated consumer expects it to be granulated if bought out of season, unless, of course it is a variety that doesn't granulate.
