Comb honey

I have a quantity of damaged frames with comb which contains only about 20% capped honey. The rest is unripe honey which the wife and I enjoy very much

. Because it`s unripe, the water content is high and I was wondering what would happen if I freeze it? Normally honey won`t freeze rock hard but what about unripe honey? And once it`s thawed... will it be OK?

It will freeze. What would interest me is. Would it dehydrate down in moisture if you left it where air could circulate around the comb. Pollen is dried down by freezing it in an open bag.

If they've started capping the frame, there's a good chance the whole frame is dried down.

I used to get a lot of honey which would crystallize in a heart beat. A drop in temperature usually makes crystallization worse, but paradoxically when you freeze it this doesn't happen.

Cut comb with this honey didn't keep more than a couple of weeks. I used to cut it and put it in plastic boxes and put them in the freezer.

It's a great way of extending the life of cut comb, just don't leave it too long.
