Hot Uncapping Knife
I have a Pierce Master model II uncapping knife which I have used for quite a few years. It seems the thermostat no longer is functioning reliably and the knife over heats. I tried adjusting the little set screw on top but it still over heats. Is there any way to replace the theromstat? I've read where some beeks rig up a rheostat which you plug the knife into. What sort of rheostat would I buy and where could I get it? Would a wall dimmer rheostat work? Thanks

I don't think an ordinary wall dimmer can handle enough juice, I'd like to find a good one myself. Guy at work was thinking I might be able to get one out of an old stovetop.

Why not call Pierce and ask them what they would recommend? That's what I would do.
