Hi
There are a lot of people that share extractors.
I have some people that I may let use mine, and am wondering how much I should be concerned about sterilizing it between sharing it?

If you are just bottling the honey, it's not a big deal at all. Just wash it out good. I suppose from an AFB point of view, it might be an issue about feeding honey from it, but I extract other people's honey from time to time and I feed my honey. I've never had a problem. I just wash it out well when I'm done and again the next time I start.

There's not too much to worry about here. I'd simply wipe
down the crank handle (or, if motor-equipped, the switches
and knobs) with a good anti-bacterial disinfectant. 
Seriously - a decent water wash is all that should be
required, as I assume that you are washing all surfaces
well enough to leave the stainless steel squeaky clean,
with no honey residue.
