My mom makes the best ettoufe! Man do I miss the food in south Louisiana. And yes you can get crawfish in October! If memory serves me, the shell is thicker; therefore, a bit harder to peel. Most people think Louisiana food is hot. It is better to describe it as well seasoned. Dcross are you thinking of going?

I'm putting in for vacation tommorrow. And by Wisconsin standards, the food in LA is HOT.
