If it was possible to screen an area around a hive so that the bees could not gather nectar, and they were fed only sugar water and pollen would the cured end product technically be honey? It would afterall be the product produced by bees!
I know that it wouldn't have the distinctive flavor provided by nectar, and it's various included elements, but would it have the appearance, consistency, and a taste similar to that of real honey?

Absolutely not. All you would have is cured sugar water.

No. It would look, act and taste just like cured sugar water.
The bees make some enzymes that invert some of the sugar so it wouldn't exactly be sugar syrup, but it would not be honey either.
