    Beeware10, I use the same technique now as you described. The problem I encounter is too much air getting into the honey, I use clear jars and inconsistent crystalisation is not visually appealing....

    Thanks Frank, all the thermostats i have seen to date boast a differential of .5 degrees. I am looking for something with an adjustable differential otherwise it will suck unnecessary power.

    I mixed it in while mixing in seed honey. So it will be creamed. I tried extract but it then tasted sour while real lemons gives it a much better flavor.

    I trade for pork, my retail price against theirs. Essentially a sale from both sides, just this way no money changes hands. I might add they use the honey to flavor the pork I eat. Double win for me...
