Thanks Ben.
Hey Ben,
What's a triange test?
Anthony
I've made a few braggots this way since posting this and do believe there's a noticable differance.
Also came across a couple historic recipes first printed in "The Closet of Sir Kenelme Digby...
Hey Propolis,
It's hard to put a time line on when it may clear. I've had sediment form in bottles when the mead looked crystal clear at corking.
As to dark color mead (I make a lot of them),...
Thank's Ben,
I'm not in a rush, simply expected it to go like other braggots have. That and not knowing what to expect from the other changes made to my normal braggot recipes.

Things that differ in this batch from the others;
90% of the grist was malted wheat,
2 1/2 lb of apples,
The wort was warm (105F) when added to the fruit in primary,
Belgian Saison was the only...
This batch is showing no sign of clearing, every braggot I've made in the past has been ready to bottle by the third week.
Have added Irish Moss tea 2 times. After the first addition close to 3"...
Gravity 0.098 ~ 74F
Flavor; apple is the first impression when tasting, mixed with light malt. Medium-low hops bitterness comes through in the mid pallet then a clean, tart and dry finish.

Primed and bottled last night, this one may need to age a bit. The alcohol is warming not hot or harsh, but... it does give a feeling like heart burn.
Any thoughts on what the causes of this is?

I'm quite surprised. This was brewed 06/11/06, in two days more then half the sugar has been converted.
Aroma is of yeast and apples, with honey and malt in...
Thank's Aspera,
I'll read up on it. I know nothing about ale yeast, have only used two from Wyeast.
I select yeast for a mead based on; starting gravity, style of mead, fermenting temp (it's...
I had planned on using 3726 Farmhouse Ale. The guy at the brewshop said it was pulled by Wyeast, and 3724 (Belgian Saison) should be very close.
Classic farmhouse ale yeast. Spicy and complex...
Racked into 2 quarts water used to boil 0.7oz Galena pellet's for 1 hour, leaving 3" of trub behind.
This hops addition should bring the IBU's up to 15.
5 gallon primary ~ 6 gallon secondary
6 lb Sage honey
2 1/2 lb Mixed apples
4 1/4 lb German wheat malt
8 oz Belgian aromatic
4 oz Belgian biscuit
0.7 oz Galena hops
Mash-in, 12 quarts...
Thanks for the input.
I made two extract braggots (2nd w/ specialty grian), before jumping into all grain.
This will be the 4th all grain, second using hops. Have a lot of brewing ahead of me...
The 3.5 gallons of ale was 3.3% abv before blending with honey and water for a total volume of 6 gallons.
ABV 1.9% ~ gravity 1.140 ~ potential 19.9%
This mead is 16.93% abv now.
Even though...
Gravity 1.022 ~ Temp 72F
Racked off lies onto 1 quart water used to cook Irish Moss.
With 62% of the grian bill being cara/roasted malt which was steeped, I fingered the FG would be around...
I'm looking to add 20 - 25 IBU's, with as little hop flavor and aroma as possible.
How does Galena rank amoung the bittering varieties?
Would a 60 min. boil be enough "Burn Off" the beta acids...
Thanks Ben,
Anthony
Would one of these be a better match then fuggles for this recipe?
Hallertau Hallertauer
Alpha: 3.0 - 5.0%. Classic German hop with a mild, noble aroma, slightly fruity and spicy, flowery and...
05/31/06 Racked to secondary. OG 1.047 ~ Temp 72F
Will rack off lies and blend with additional honey when fermentation has completed.

Racked off lies into 12lb...
Every braggot I've made, has been high gravity and Porter or Stout style. Thought I'd try something new.
6 lb Sage honey
2 1/2 lb Mixed apples
4 1/4 lb Pale wheat malt
8 oz Belgian aromatic

This one has the best head and retention of any braggot i've yet to make. The head is dense enough to rise above the rim of the glass and not flow over.
It also has the best malt profile of those...
Thanks Aspera,
My math may be off but...
I don't see how an ounce of perle @ 9% for 60 min. giving more then 8 IBU's to this must.

Hey Aspera,
This was formulated for a stepped infusion mash, without sparging.
Estimated: efficiency 60%, runoff 1.084, 12lb honey 1.154, FG 1.030, 16% abv before bottle conditioning.
5oz...
