    Everyones water buffering capacity is different, so one amount doesn't work for all. You could even purchase pH strips from a hot tub or pool place to get in the right range.

    Yes you can reuse hefeweizen yeast, though to get the esters that are traditional in this beer its best to underpitch it a bit. Don't pitch onto a whole cake, I would use about 1 cup of trub/yeast...

    Should I put a newspaper over their hive under the plywood with dry sugar on it? I'm afraid at night when it gets to freezing the sugar water would freeze.
