    Can an expert really give an accurate assessment without a sugar roll alchohol wash or some other measurement? If they could I doubt if the commercial guys would be wasting their time on such things...

    Thanks, even just a scrap of wire cloth that is not stapled to the shim is a big help.

    If you hold sucrose syrup with a bit of vitamin C (or vinegar) at 160 F (more or less - but not boiling in any event) overnight it will at least partially - maybe almost fully - invert into fructose...
