Maybe i am missing something but isnt mead made from honey?

Sap isn't quite running up here, although I tapped yesterday. Can you share a recipie? Just finished my first batch of mead and was thinking maple is next, but trying to decide what to do. Folks seem to say syrup is better than sap, but it seems silly to boil the sap to syrup and then dilute it again for mead...

I don't know anything about sugaring and won't guess if sap or syrup is best. Possibly the cooking adds a little carmelization. That is why I want the dark syrup. I have never made acerglynn but it sounds sooo good and I know where I can find recipes and will look one up and post one on the homebrew division of the forum. I thought sugaring would be winding down by now?? Thought it was a February thing. Recipe stolen and posted,
Sugaring is just getting started up this way. I tapped two weeks ago but there have only been a few good days of flow so far. A friend that runs 1000 taps on vac lines just set this past week as well. Early sap tends to be lighter in color and flavor, the really dark grade syrup will finish out the season.
How much do you want?

I have 517 taps right now with 356 of those on vacuum tubing. The season is late this year in most areas. Actually its right on par with the old days when we actually had real winters.
