I have buckwheat planted in my beeyard.
The bees nearly always work it in the morning and not much, if at all the rest of the day.
If something more to their liking is available, only a very few bees are on the buckwheat and the rest forage the preferred thing.
So it would depend on whether or not the crop you want pollinated is blooming at the same time as the buckwheat. Even then, they'll be working something other than buckwheat at mid day and afternoon.
