I'm growing these for the first time this year. I've got the Asian kind, which are the skinny ones. How do I know when they are ready to pick? If they get too big, will they get bitter?

at the farm I interned at, we would let them go to 9 ish inches, depending on how bad we needed them for market.
I grow them and love them. Let them get 9 to 12 inches and pick. They are great for frying as they make nice consistent medallions. I checked my garden today and have 3 or 4 of them in the 3 to 5 inch range right now.

I grow asian eggplants yearly. My favorite is Ichi Ban. I like to pick and eat them as fresh as possible. My favorite cooking is sliced in half lengthwise and then grilling with olive oil and spices.
I pick them when they are just beginning to get soft. They are still good for a while, but I prefer
them at that stage. Enjoy!
8 inch minimum 12 inch max anywhere above that they start getting hard.
